Five generations of winemaking in Slovenian Istria

At Butul Estate, knowledge of wine is passed down from generation to generation. Črt Butul represents the fifth generation of winemakers and continues the family tradition in the heart of Slovenian Istria.

We carefully renovate and expand our vineyards, preserving local grape varieties, traditional knowledge, and respect for the natural rhythm of the earth.

Natural cultivation and minimal intervention

We treat our vineyards with respect for nature and without unnecessary intervention. In the cellar, we monitor natural processes and allow the wine time to develop depth, texture, and character.

  • vinification in stainless steel and glass containers,
  • maturation also in used oak and acacia barrels,
  • honourable processes without concealing the character of the vintage and the site.

The tradition of maceration

For Malvasia, we often use maceration, meaning the contact of grape juice with the skins. This creates complex amber wines with a rich structure, distinct aromatics, and a recognisable Istrian character.

A warm Mediterranean climate, mineral flysch soils and the proximity of the sea give our wines balance, freshness and expressiveness.

Malvasia

Istrian queen with a distinct aroma, minerality and myriad facets.

Refošk

A dark, vibrant wine with an Istrian character, grown on our clay and marl soils. According to one interpretation, the name Refošk is said to derive from the Latin term Rex Fuscus, which could mean »king of the dark« – hence we also call it black wine.

Istrian Muscat

A fragrant local speciality with the clear stamp of the sun and proximity of the sea.
