Refošk – Boškarin 2017, harvested from the sunny slopes near our farmstead. This unique wine embodies the essence of our commitment to quality winemaking, showcasing the rich flavors of hand-picked grapes left to mature on the vine.

Vinification:
Harvest Year: 2017
Maturation: Hand-picked grapes, underwent spontaneous fermentation with uncontrolled temperatures and nearly a month of maceration.
Aging: Meticulously matured in anbarriques on fine lees until summer 2019, with no added sulfur.

Ingredients:
– Beef cubes (500g)
– Refošk – Boškarin wine (240ml)
– Olive oil (30ml)
– Salt and black pepper to taste

For the Spice Rub:
– Paprika (5g)
– Cumin (2.5g)
– Coriander (2.5g)
– Smoked paprika (2.5g)
– Garlic powder (2.5g)
– Onion powder (2.5g)
– Cayenne pepper (a pinch for heat)

For the Creamy Tolminc Polenta:
– Cornmeal (180g)
– Chicken or vegetable broth (960ml)
– Butter (30g)
– Tolminc cheese (120g, grated)
– Salt and pepper to taste

Instructions:
1. Combine all the spices for the rub in a bowl and mix well. Rub the spice mixture evenly over the beef cubes.
2. Marinate the seasoned beef cubes in Refošk – Boškarin wine for at least 2 hours.
3. In a pan, heat olive oil over medium-high heat. Add the marinated beef cubes and sear until browned on all sides.
4. Pour in the remaining Refošk – Boškarin wine, bring to a simmer, then reduce the heat. Allow the beef to cook until tender and the sauce thickens.
5. While the beef is simmering, prepare the creamy Tolminc polenta. In a separate pot, bring the broth to a boil. Slowly whisk in the cornmeal, stirring continuously to avoid lumps.
6. Reduce the heat to low and continue stirring until the polenta thickens. Add butter, grated Tolminc cheese, salt, and pepper. Keep stirring until the polenta is smooth and creamy.
7. Serve the Refošk-infused beef over a bed of creamy Tolminc polenta.
8. Garnish with fresh parsley and savor the delightful combination of flavors.
