Mountain cheese with 'weinstone' is made from unpasteurised milk during the summer months, when the cows graze in the Matajur foothills. It matures for at least three months in the mountain pasture, where it develops the full flavour and character of a mature mountain cheese.
The speciality of this cheese is the addition of cream of tartar, which is produced when cleaning wooden wine barrels. This way, the cheese connects the dairy tradition of the mountain pasture with the wine story of the Butul Estate.
Serve it on a cheese platter, with natural wine, bread, olive oil, honey, or pickles.
