The proces
Refošk – Mali Boškarin was meticulously harvested in the exceptional year of 2017, starting in October, in the sunny southwestern position near the village of Manžan. Since the maturation was optimal, the grapes were left on the plant until fully mature and pushed even till mid October. Handpicked grapes, some already dried, were laden with extracts. The winemaking journey involved an intense fermentation at natural temperatures of the cellar, a maceration for nearly a month, and a gentle decantation before aging for next three years in wood. A portion was bottled to capture its live and extraordinary essence, and we call it Mali Boškarin or “Small Boškarin” while another piece continued to rest in wooden barrels.
