This dreaming, of course, was accompanied by some mockery over the years, ideas were often ahead of their time and misunderstood, but our push for self-sufficiency has clearly borne fruit, even in the toughest times. I never liked the title \u201cchef\", but I always wear it with pride and have always said that we chefs are merely intermediaries between nature and the guest, promoters of biodiversity.
